Portions for 1 person:
2 eggs
4oz of cooked aubergines
2oz of cooked onions
1/2 red pepper cooked in oven
1oz goat cheese
2 tbsp olive oil
1 slice of country bread
Prepare the vegetables on previous days by doubling quantities for another dish.
Heat a large pan with the olive oil over medium heat. Slice the onion quite thinly and put in the pan. Cut the aubergine in three sections and then slice in 1/4" segments. Do not peel the aubergine. Cook the aubergines between 30 and 45mn. Take care not to burn the vegetables; keep an eye on the pan the first time.
Cook the red pepper 1h in the oven or in a closed pan (turn it every 15mn), peel and seed it.
Put all the vegetables in a frying pan with 1tbsp of olive oil.
The omelette:
Beat the egg slightly in a bowl and cut in the goat cheese in small pieces and beat a second time.
When the vegetables are hot, add the remaining olive oil in the pan. Cover the vegetables with the omelette and spread it evenly over the vegetables. After a few minutes, fold the omelette by starting by one side.
